Bring salted water to a boil.
Add the lentils and cook until soft, around 10 minutes. Drain and let sit for 5 minutes.
In a nonstick pan, heat the oil over medium heat.
Add the mustard seeds and as soon as they start popping add asafoetida, salt, dried red chillies and urad dal. Fry until dal starts to turn golden.
Add the curry leaves, salt and stir.
