Wash, pat dry and cut eggplants in to 1/2 inch rounds. First apply some olive oil on both sides of chopped eggplants.Then season with Italian herbs, red chilli flakes, garlic powder, black pepper and some salt from both the sides. Let it rest for 15 mts.
Preheat grill, grease with some oil and then grill from both the sides till they are done.
Now butter bread slices. To stuff sandwich first add paste sauce on one bread slice, then add baby spinach,grilled eggplant, pasta sauce, some cheese, close it with other bread slice.
Grill from both the sides for about 3 to 4 mts.
Serve with soup, salad or just as it is!
Tips:
Use charcoal or gas grill for better taste.
May substitue Italian herbs by using Oregano.
Cooking time for each grill differs so try to cook using your own judgement.
