Zucchini Chocolate Cake recipe

Ingredients

  • 2 cups zucchini, grated
  • 1/2 cup butter
  • 2 large eggs
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk or sour milk
  • 1/2 cup walnuts
  • 3/4 cup chocolate chips
  • 1/4 cup cocoa
  • 1 teaspoon vanilla
  • 1 3/4 cups sugar

Cooking Instructions

Preheat the oven to 325 degrees F.
Cream the butter, then add the oil and sugar; mix.

Add the zucchini, eggs, buttermilk, vanilla, cocoa, flour, baking soda and salt; mix well.

Fold in the chocolate chips and walnuts by hand.

Place the cake in a greased and floured 9×13 pan.
Bake for about 1 hour (or until
done).
