Cheesy Spinach Chicken Corn Enchiladas recipe


  • Chicken in small cubes (cooked) 1 cup
  • Onion chopped 1 medium
  • Spinach blenched 1/4 cup
  • Sour cream 1/2 cup
  • Margarine 1 tbsp
  • Paprika 1 tsp
  • Green chili (chopped) 1 tbsp
  • Parsley 1 tbsp
  • Salt 1 tsp
  • Pepper 1 tsp
  • Salsa 1/4 cup

Cooking Instructions

Heat margarine fry onion. Add green chili, pepper, and paprika, salt.

Now on low flame add cream, chicken, chicken stokes, spinach.

Put 2-tea spoon mixture on tortilla bread.

Roll up and place seam side down in baking dish, tap with shredded cheese and salsa corner with foil.

Bake at 180o C for 20 minutes.
