Preheat oven to 200 degree.
Whisk together egg yolks and sugar until mix well.
Slowly add cream and vanilla, and stir gently to combine well.
Place small ramekins in a large baking pan.
Fill the pan about half full with boiling/hot water.
Pour the custard mixture evenly into the ramekins.
Bake about 40-60 minutes. After that insert knife in custard, once the knife comes out mostly clean, they’re done.
Remove ramekins from the boiling water, and allow to set and cool for 15 minutes.
Sprinkle with sugar and caramelize under a broiler.
Chill over night or at least one hour.
