Place the egg whites, caster sugar, milk and vanilla essence in a bowl and whisk together. Microwave for 4 minutes.
Place the breadcrumbs and grated lemon rind in a greased shallow 5 cup microwave dish and stir in the milk mixture. Microwave for 5 1/2 minutes stirring every minute.
Set aside. Place the jam in a small bowl and microwave for 1 minute. Gently spread the jam over the cooked breadcrumb and milk mixture. For the topping fold the sugar into the whisked egg whites.
Spread the meringue over the jam and swirl into decorative peaks. Cook the Queen of Puddings for 3 minutes.
Brown the pudding for a few moments under a preheated conventional grill.
