In a non stick pan, dry roast sesame seeds on medium heat for about 10 minutes. Sprinkle salt.
Combine Jaggery and water in a heavy bottom sauce pan. Bring it a boil. The experience Halwaii knows from the bubbles on the bottom, when the syrup is ready. Instead we will use a candy thermometer. Heat to 240°F.
Combine roasted sesame seeds, Ghee, and Cardamom powder. Let it cool to 110ºF
Prepare a kneading surface. Line it with or butter. Mix and beat mixture about 3 minutes.
Line a baking sheet pan with a parchment paper. Butter the parchment paper with Ghee or Butter.
Transfer the mixture on to the sheet pan. Use the wooden spoon and flatten it out to about 1/8th to ¼ to thick slab.
