Prepare the pan in advance by greasing and then shaking the sugar-cinnamon mixture until the sides and bottom are coated well.
Combine oil and sugar mixing well. Add eggs, beating after each addition. In a separate bowl, combine flour, cinnamon, nutmeg, baking soda and salt. Add vanilla to egg mixture and mix well. Slowly
add the blended flour mixture into the mixing bowl. Stir in the apples and nuts.
Pour batter into pan and bake at 325 degrees for 1-3/4 hours
