Take a pan on medium heat. Add cinnamon, cumin, mustard, paprika, ginger, coriander and black cardamom and let them start smoking.
Then turn off the heat and cool. After it is cool grind them using a grinder and place it aside.
Cut cucumbers into ½” slices after peeling.
Peel, pit and cut mangoes in chunks.
Chop the green and red bell pepper in thin strips.
Take a big bowl and mix together bell pepper, mangoes, cucumbers and potatoes.
Then add lemon juice, ginger, orange juice and 1 tbsp of the spice mix.
Mix well and season with pepper and salt.
