Cheddar Corn Pancakes recipe

Ingredients

  • ½ cup frozen corn, thawed
  • 3 cups frozen hash browns, thawed
  • 2 tbsp scallions, chopped
  • 3 eggs
  • 1/3 cup heavy cream
  • 1 tbsp unsalted butter, melted
  • ½ tbsp salt
  • ½ tbsp course ground black pepper
  • ¾ cup shredded cheddar cheese

Cooking Instructions

Combine all ingredients in a large bowl and mix well.

Separate mixture into six half cup portions & form into patties, roughly 3.5 inches across.

Saute in an oil-coated skillet at medium-high heat for 3 to 4 minutes until golden brown.

Serve as side dish or appetizer, with a dollop of sour cream on top.
